食物的口感与热量

当食物松软香糯时,我们会认为与坚硬的食物相比它们更容易使人发胖。好比说,大部人都市以为热乎乎的软饼干比冷却后的脆饼干含有更多的卡路里。

一项研究讲明,口中的食物质地,也俗称“口感”或者“口腔触觉”,会影响你对食物热量的预判,从而影响总体的食物摄入。该研究揭晓在《消费者研究》(Consumer Research)杂志上。

科学家让自愿者品尝了差别的布朗尼蛋糕,其中一半人获得的是硬蛋糕,另一半人则是软蛋糕,所有人都必须推测一下每份蛋糕样品的热量。与吃了硬蛋糕的自愿者相比,软蛋糕组所预估的热量横跨了55%;而且硬蛋糕组的人吃了更多的蛋糕。也许他们认为因为口感的关系,蛋糕损失了不少卡路里。

Eaters Assume Crunchy Foods Have Fewer Calories

When food isgooey, we assume it’s morefatteningthan harder foods. For instance, most people guess that a soft, warm cookie has more calories than a cooled-down, crunchier version.

New research confirms that food’s texture in your mouth—also called “mouthfeel” or “oralhaptics”—influences estimates of calorie counts. And thus affects total food consumption. The study is in theJournal of Consumer Research.

Scientists offered brownies to volunteers. Half got hard brownies. The other half got softer ones. They all had to guess the number of calories in each sample. And the group that ate the softer brownies produced estimates for their caloric value 55 percent higher than the estimates for the hard brownies by the subjects who ate them. The hard brownie group also ate more brownies. Probably because they thought they were getting a caloric bargain due to mouth feel.

The researchers also offered brownies to a second group of volunteers. Again, half received hard brownies, the other half got soft ones. But this time participants were not asked to estimate calories. This group...[full transcript]
